Limited edition from a 0.8-hectare Flint Clay (Silex) vineyard. 3,000 bottles produced only.

Fermentation in fine grained oak barrels from the local forests. One third of the barrels are renewed each year. Ageing 11 months in barrels with regular stirring of the lees, then 12 months in vats.

The wine is full bodied and fleshy, with hints of sunshine. The toastiness is mellow. It combines with a lovely fruitiness. The minerality balances the whole. A pleasantly salty finish that lingers for a long time.

At the head of the estate since 2005, Catherine Corbeau Mellot is now joined by her children.

The vineyards are entirely cultivated in line with the principles of ecological and certified agriculture (HVE), part of which is organic.

The vineyards of Joseph Mellot cover 8 appellations of the region, of which Sancerre and Pouilly-Fumé are the most renowned.
