Martinique, a French Caribbean island, is mainly producing \u201cRhum Agricole\u201d, which is obtained by distilling of sugar cane juice. This kind of rum is more aromatic. To produce 10 litres of rum roughly 100 kg of sugar cane needs to be processed.
\nIn 1996, the Martinican Rhum Agricole obtained an AOC recognition, \u201cAppellation d\u2019Origine Contr\u00f4l\u00e9e\u2019\u2019 and is the only one so far.<\/p>\n
Like in Cognac or Armagnac, there are strict ageing conditions & appellations:
\n*\u201cRhum Blanc Agricole Martinique\u201d: min. 8 weeks in steel tanks
\n*\u201cRhum Vieux Agricole\u201d: min. 3 years in oak casks of mac 650L
\n*\u201cRhum Extra Vieux Agricole, XO\u201d: min. 6 years in oak casks
\nAll ageing & bottling must be done on the island.

Rhum Cl\u00e9ment has been established in 1887 when Hom\u00e8re Cl\u00e9ment, physician and mayor of Le Fran\u00e7ois in Martinique, purchased a 43-hectare sugar plantation, Domaine de L\u2019Acajou.
\nInspired by the enjoyment of great brandies while studying in his early years in Paris, Hom\u00e8re mimicked the distillers of the great Armagnac\u2019s of southwestern France to perfect his method of rhum production known today as Rhum Agricole.Nowadays, Rhum Cl\u00e9ment has 8000 barrels patiently aged in their 5 historical cellars and is a leading producer of A.O.C. Martinique Rhum Agricole, exporting to 80 different countries.
\nAround 8% of the volume of each barrel is lost every year due to \u00ab evaporation \u00bb (or Angel share).
