Unpasteurized and cold-extracted from the frames, the honey retains its full nutritional properties and the vivid scent of the land.

Its lightly amber colour is the signature of the terroir: the more continental climate brought by proximity to the Apennines delays flowering, leading the bees to gather in the summer months the honeydew — sweet secretions from woodland trees and shrubs that enrich the honey with minerals and lend it a distinctly complex aromatic character.

Natural crystallization, which intensifies at lower temperatures, is not a flaw but a mark of quality: evidence of a high pollen concentration and the complete absence of heat treatment.
